Healthy Irish Soda Bread Recipe

Whether you’re Irish or Irish-at-heart, chances are you’ll be lining up for some traditional Irish Soda Bread (with a side of green beer?) this St. Patrick’s Day.
Did you know, the makeup of Irish Soda Bread is actually very simple? It features standard ingredients such as flour, salt, and baking powder. So, what really makes Irish Soda Bread so unique? You guessed it! Plants. Currants and caraway seeds give the bread its unique anise-like flavor (think licorice) and both derive from plants. Swap in your go-to, nondairy milk product as well as your favorite vegan butter and voila! Your St. Patty’s Day garb won’t be the only thing that’s green.

Ingredients

  • 1 cup Nondairy Milk (Soy, Almond, Coconut)
  • 1 tbsp + 1tsp Fresh Lemon Juice
  • 1 cup White Flour
  • 1 cup Whole Wheat Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/4 cup Maple Syrup
  • 4 tbsp Vegan Butter – melted
  • 1/2 cup Currants
  • 1 tsp Caraway Seeds (optional)

Directions:

  1. Preheat oven to 375. Grease a large cast iron skillet (or any large ovenproof skillet) with cooking spray. In a small bowl, combine the nondairy milk with the lemon juice to make “buttermilk”. Set aside.
  2. In a large bowl, mix the white and whole wheat flour, baking powder, baking soda, and salt. Stir to combine.
  3. In another small bowl, combine the melted vegan butter and maple syrup. Add to your “buttermilk” and mix well.
  4. Add your the wet ingredients to the dry, and stir, just to combine (do not over mix!). Mix in currants and caraway seeds, if you’re using them.
  5. Pour batter into the prepared pan and bake until golden brown, about 30 minutes. Let rest at room temperature for at least 15 minutes and serve with your favorite vegan buttery spread (we love cinnamon butter!).
