Healthy Valentine’s Day Truffles

Healthy Valentine’s Day Truffles

Makes: 10-12 truffles
Ingredients:

  • ½ cup Walnuts (whole, raw, unsalted)
  • 5 each Pitted Medjool Dates
  • 3 each Dried Turkish figs
  • 2 tablespoons Cocoa Powder
  • 2 tablespoons Maple Syrup
  • ½ teaspoon Sea Salt
  • ½ teaspoon Vanilla Extract
  • ½ cup Almonds (whole, raw, unsalted)
  • 2 tablespoons Cocoa Nibs
  • 2 tablespoons Almond Butter

**Optional (for rolling): crushed pistachios or walnuts, cocoa nibs, unsweetened coconut, cocoa powder, hemp seed

Step 1.

Place the walnuts in a food processor and pulse until coarsely ground. Add the dates and figs, and pulse until well mixed with the nuts. Add the cocoa powder, maple syrup, sea salt and vanilla extract. Process mixture until smooth. Add the whole almonds and cocoa nibs, and pulse again until well dispersed in mixture but still slightly chunky (you may need to scrape down the sides of the processor with a spatula a few times). Transfer the mixture to a bowl and stir in the almond butter with a spoon (or use your hands!)

Step 2.

Using your hands, form the mixture into 10 to 12, slightly smaller than golf ball sized balls. Roll truffles in assorted toppings and refrigerate.
