  3. ⅓ cup sugar
  4. 1 tsp vanilla extract
  5. ½ tsp ground cinnamon

  7. ½ cup bourbon or rum (optional)

Soak the cashews and blend

Add the cashews to a small bowl and cover with hot water and let soak for 10 minutes. To a blender, add the coconut milk, sugar, vanilla extract, cinnamon, nutmeg, and bourbon. Drain the cashews and add them to the blender. Blend on high until smooth and creamy.

Heat and serve

Serve chilled or pour the eggnog into a small saucepan and heat on low, stirring occasionally, until warm. Enjoy!
