Make the dough

Preheat the oven to 350°F. Line a baking sheet with parchment paper. Add the peanut butter, maple syrup, and ½ tsp salt to the bowl of a food processor. Process on high until peanut butter mixture thickens and forms a solid mass, about 1 to 2 minutes.

Shape the cookies

Divide the cookie dough into 10 even pieces and transfer to the lined baking sheet. Roll each piece into a ball using your hands. Use the back of a fork to press a criss-cross pattern into each cookie, flattening each ball into a disc about ½ inch thick. Sprinkle with sesame seeds.
