  4. 1 lemon
  5. 3/4 cup pitted dates
  6. 1/2 cup dried blueberries
  7. 1/2 cup coconut flakes

INSTRUCTIONS

Rinse and dry the lemon. Using a grater, zest the lemon. Cut the lemon in half and juice it into a small bowl and set aside, watching out for seeds. Roughly chop the dates.

Blend the cashews and coconut together in the food processor until they resemble corn meal.

Add the dried blueberries, dates, lemon juice and zest, vanilla, and salt to the food processor. Blend all the ingredients together until they form a rough ball of dough that sticks together when pinched.

Remove from the food processor and roll into balls about 1 to 1 1/2 inches in diameter. Balls can be stored in the fridge for up to 1 week. Enjoy!
