- 1 cucumber
- 1 shallot
- 9 oz shaved Brussels sprouts
- 2 oz sun-dried tomatoes
- 4 oz multigrain croutons
- ½ cup vegan Caesar dressing

Thinly slice the cucumber. Peel and thinly slice the shallot. Divide the shave Brussels sprouts between serving dishes and top with sliced cucumber, sliced shallot, sun-dried tomatoes, and croutons. When you’re ready to eat, drizzle with Caesar dressing.
