Blend the dates

Check the dates for any pits and remove if present. Add the dates, coconut milk, and cornstarch to a blender and blend on high until very smooth.

Make the caramel

Place a small saucepan over medium-high heat and add the coconut sugar. Pour the blended date-coconut mixture on top and bring to a simmer. Cook, stirring occasionally, until all of the sugar has dissolved and the mixture is glossy. Add the vanilla extract and salt and stir well to combine.

Serve the caramel sauce with sliced apples, or drizzle it over vegan baked goods. Enjoy!
