Prepare the toast
Toast as many of the sourdough bread as you’d like. Thinly slice the cucumber lengthwise.

Serve
Spread the scallion cashew cheese on the toasted bread. Top with thinly sliced cucumber and baby arugula. Drizzle each with 1 tsp olive oil and sprinkle with sunflower seeds and everything bagel spice.
