Prep the ingredients

Combine the flaxseed meal and 4 tbsp water in a small bowl. Set aside until thickened, about 2 to 3 minutes. Add the maple syrup, coconut milk, and vanilla. Whisk the batter until smooth.

Cook the French Toast

Place a large nonstick skillet over medium-high heat with 2 tbsp coconut oil. Dip the bread into the batter, coating both sides evenly. Once the oil is hot, add the battered bread, shaking off any excess batter. Cook until golden brown, about 3 to 5 minutes per side. Repeat with the remaining slices of bread.
