Cook the rice

Add the sushi rice, 1 cup water, and a pinch of salt to a small saucepan and bring to a boil. Cover, reduce heat to low, and cook until the grains are tender and water is absorbed, 12 to 15 minutes.

Prepare the bowls

Halve the avocado, remove the pit, and thinly slice the flesh. Dice the peach. Roughly chop the macadamia nuts. Halve and juice the lime. Add lime juice and tamari to a small bowl and whisk until combined.

Serve

Divide the cooked sushi rice between 2 bowls. Top with sliced avocado, diced peach, and chopped macadamia nuts. Drizzle tamari lime dressing over the fresh peach poke bowls and sprinkle with kibbled nori.
