  1. 3 overripe bananas
  2. 2 cups rolled oats
  3. 1/4 cup coconut oil, melted
  4. 8 ounces pitted dates, chopped
  5. 3 tablespoons unsweetened coconut flakes
  6. 1 tablespoon vanilla extract

INSTRUCTIONS

Step 1

Preheat oven to 350 degrees. Line two cookie sheets with parchment paper and set aside.

Pour coconut oil into a microwave safe bowl and microwave for 10-15 seconds (or until gently melted). While the coconut oil is warming up, chop the dates.

In a large bowl, mash bananas, mix in rolled oats, coconut oil, dates, coconut and vanilla extract. Stir to combine and let sit for 15 minutes.

Scoop rounded tablespoonfuls of dough and place on cookie sheet, two inches apart. Note that the cookies do not spread so you may want to shape with the back of your spoon. Bake for 20 minutes or until cookies set and start to brown. Remove from oven and let cool on baking sheet for 5 minutes. Move to a wire rack to cool completely.
