with Sun-Dried Tomatoes & Chickpeas
- 1 package garbanzo beans
- 1 cucumber
- 1 shallot
- 9 oz shaved Brussels sprouts
- 2 oz sun dried tomatoes
- ½ cup Follow Your Heart® vegan Caesar dressing
Drain and rinse the garbanzo beans. Thinly slice the cucumber. Peel and thinly slice the shallot. Divide the shaved Brussels sprouts between serving dishes and top with the cucumber, shallot, sun dried tomatoes, and garbanzo beans. When you’re ready to eat, drizzle with Caesar dressing.
