Prepare the salad
Thinly slice the cucumber and radishes. Add the kale beet blend to a large bowl and toss with just half of the Caesar dressing, sliced cucumber, sliced radishes, roasted tomatoes and a pinch of salt and pepper.

Divide the kale Caesar salad into 2 servings. Top with roasted chickpeas. Drizzle with the remaining Caesar dressing. Season to taste with salt and pepper.
