  1. 3 tablespoons coconut flakes, used in 2 steps
  2. 1/2 teaspoon vanilla extract
  3. 1 cup pitted dates
  4. 3/4 cup rolled oats
  5. *not included

  8. 1/2 cup raw cashews

INSTRUCTIONS

Rinse and dry the lemon, then zest. Cut in half and juice into a small bowl, watching out for seeds. Put 1/2 of the coconut flakes on a small plate and set aside.

In a food processor or blender, blend the cashews, oats, dates, lemon zest, lemon juice, vanilla, and a pinch of salt. Keep blending until the mixture forms a sticky ball, and then add in half the coconut flakes. Continue processing until a ball of dough has formed, then remove and place dough on a clean work surface.

Roll small scoops of the dough in your hands to form balls about 1 1/2 tablespoons in size, repeating until you have used all the dough, and then roll the bites in the remaining coconut flakes. Leftover blondie bites can be stored in the refrigerator. Enjoy!
