Blend it up

Add the pistachios to a food processor and blend until finely chopped. Remove a few tbsp from the food processor for garnish if you’d like. Add the dates (checking for any pits that may remain) and blend until a ball forms, with everything well mixed.

Roll them

Measure out 2 tbsp of the pistachio date mixture and roll into a ball. Dip into the reserved pistachios or coconut, or leave as is. Continue with all of the mixture until you have 12 pistachio date balls.
