Toss the salad

Make a small 2 inch tear in the top of the quinoa bag and microwave for 1 minute. Thinly slice the radishes. Divide the quinoa and baby spinach into 2 servings. Top with radishes, pistachios, and scallion cashew cheese. When you’re ready to eat, drizzle with lemon vinaigrette.
