Three Bean Burritos

INGREDIENTS
- 1 can black beans
- 1 can refried beans
- 1 can kidney beans
- 1 tomato
- 1 avocado
- 1 teaspoon chili powder**
- 1/2 tablespoon cumin**
- 1/2 teaspoon garlic powder**
- 8 whole wheat flour tortillas
- 1/2 cup shredded vegan cheese
- 1 red onion
- 2 peppers
- 2 tablespoons water*

INSTRUCTIONS
Prep: Peel and dice the onion. Dice the tomato and peppers. Slice the avocado in half lengthwise, discard pit and slice thinly. Drain and rinse the black beans and kidney beans.
In a large sauté pan, sauté the onions with 2 tablespoons water over medium heat until onions are softened, about 5 minutes.
Add the diced peppers and sauté stirring occasionally for another 5 minutes.
Add the black beans, kidney beans, refried beans, spice blend and diced tomato to the pan cooking until the beans are hot, about 7-10 minutes. Reduce the heat to low and keep warm.
Assemble the burrito by placing a tortilla on a flat work surface and spread about ¼ cup of the bean mixture across the lower third of each tortilla. Sprinkle with shredded cheese and a slice of avocado. Fold up the burrito by bringing the bottom end over the filling, folding in the sides, and then rolling it up.
Serve immediately with the seam side down. Top with more cheese and avocado if desired, and enjoy!
