We nicknamed this dish “sunshine curry” because the mix of delicious vegetables and sweet, tangy pineapple creates tons of bright flavor. Cashews add crunch and chickpeas bring the protein and fiber, creating the perfect meal to fuel you during a busy week. And everything is served with midnight grains, a high-protein blend of black rice, black quinoa, and beluga lentils.


Heat it up in the microwave
Pull back the film about 1 inch and heat meal on high for 2 minutes.* Let it sit for 2 minutes, peel off film, stir, and dig in! And please be careful, the bowl might be hot.
