Chilled Farro Antipasto

with White Beans & Caprese-Style Tofu

This antipasto-style meal should be eaten cold. (Yes, cold!) Farro creates a tasty base for some of our favorite toppings: briney olives, artichoke hearts, and roasted red peppers. Marinated white beans add protein and a buttery texture, making this one flavorful and nutritious meal.


If you’re about to reach for the microwave, don’t! This is just about the easiest meal prep ever: Simply remove the film, stir, and dig in! 
Store in the fridge (not the freezer)!
