This vibrant side salad was inspired by "elote," Mexican grilled corn slathered in creamy mayonnaise and sprinkled with salty cheese and chili powder. Here, we transformed this beloved street food into a festive medley of sweet corn, succulent roasted poblano peppers, and verdant cilantro, all tossed in a creamy, smoky chipotle "mayo" with vegan parmesan and fresh lime juice.
