Cook the porridge
Add amaranth, cacao powder, coconut milk, non-dairy milk, and a pinch of salt to a small saucepan over medium heat. Bring to a simmer, and reduce heat to low. Cook until grains are tender, 12 to 15 minutes. Add maple syrup and stir.

Divide the amaranth chocolate porridge between bowls and top with mango and hazelnuts.
