Aquafaba Chocolate Mousse

- 1 cup vegan chocolate chips
- ¾ cup aquafaba (the liquid from canned chickpeas)
- ¾ tsp apple cider vinegar
Microwave the chocolate chips in a bowl until completely melted, about 30 seconds.
Add aquafaba and apple cider vinegar to the bowl of a stand mixer. Using the mixer’s whisk attachment, whisk the aquafaba until it forms stiff peaks. Continue to whisk for another 2 minutes. TIP: It can take 8 to 10 minutes of whisking before stiff peaks form, depending on the strength of your mixer. The aquafaba won’t whip if it comes into contact with any grease, so make sure all tools are very clean.
Add the slightly cooled chocolate to the aquafaba and continue to mix. (The mixture will be runny at first, then begin to thicken.) Once it thickens, stop whisking. Divide the mixture into four serving bowls or cups and chill for at least 2 hours. Garnish with your favorite toppings.
