  2. 1 avocado (pit removed)
  3. 2 oz vegan shredded mozzarella
  4. 1 Roma tomato, thinly sliced
  5. 1.5 oz red piquanté peppers, roughly chopped
  6. 1/4 cup vegan tzatziki
  7. 1 tbsp olive oil*

Build the melts

Place half the bread slices on a cutting board. Scoop avocado onto the bread and gently smash. Divide mozzarella, tomato, and piquanté peppers between the slices and sprinkle with salt and pepper. Close the sandwiches with the remaining bread slices. TIP: If all of the tomato and avocado doesn’t fit in the sandwich, serve on the side.

Cook the melts

Heat 1 tbsp olive oil in a large nonstick skillet over medium heat. Add the sandwiches and cook until bread is golden brown and cheese has started to melt, 3 to 5 minutes. Flip the sandwiches and cook for another 3 to 5 minutes.

Serve

Halve the avocado melts and serve with tzatziki.
