Combine the dry ingredients

Preheat oven to 350°F. Grease loaf pan with 1 tbsp butter. Add flour, baking soda, baking powder, and salt to a medium bowl, and whisk. Fold in chopped walnuts if using, and stir to combine.

Combine the wet ingredients

In a mixer with a paddle attachment, cream the brown sugar and butter together until light and fluffy, 5 to 7 minutes. Add milk, mashed banana, vanilla, and apple cider vinegar, and mix until just combined. TIP: This step can also be done with a whisk if you don’t have a mixer.

Combine the wet and dry ingredients

With the mixer on low, add dry ingredients until just combined, with no dry spots visible. Do not overmix.

Bake

Pour batter into the greased loaf pan. Bake at 350°F for 60 to 70 minutes, or until the bread is golden brown and a toothpick inserted into the center of the loaf comes out clean. Let bread cool slightly before serving. TIP: Check your bread halfway through the cooking time. If the top of your bread is getting too dark in color, cover it with foil for the remainder of the baking process.
