Banh Mi Avocado

with Quick Pickles & Bamboo Rice

Green bamboo rice has a subtle floral aroma, with a light, almost vanilla scent. We use this as a base for a stuffed avocado inspired by our favorite Vietnamese toppings, quick pickles, spicy aioli, and lots of fresh herbs. When you’re pickling the vegetables, keep in mind that they will gain some spice from the jalapeno so add just enough if you’re sensitive to heat. The nori spice, flakes of seaweed with sesame seeds, will add a savory crunch.
