Black Bean Brownie Sundae
with Cherries and Chocolate

- 1 can black beans
- ¼ cup cocoa powder
- ¼ tsp salt
- ⅓ cup agave
- ½ cup coconut oil
- 2 tsp vanilla extract
- ½ tsp baking powder
- ½ cup all purpose flour
- ¾ cup vegan chocolate chips
- Vegan ice cream*
- Luxardo cherries*
- Vegan dark chocolate shavings*

INSTRUCTIONS
Preheat the oven to 350°F. Drain and rinse the black beans. Add to a food processor along with the cocoa powder, salt, agave, coconut oil, vanilla extract and baking powder. Pulse to combine. Add the flour and chocolate chips and pulse again to combine.
Grease a small baking dish with coconut oil, or an oil of your choice. Pour the brownie mix into the pan and evenly spread to cover the bottom. Sprinkle brownies with a pinch of sea salt and bake until a paring knife inserted in the middle of the pan comes out clean, about 30 to 35 minutes.
Let the brownies cool for 5 to 10 minutes. Cut into 6 or 8 equal portions. To build your sundaes, top brownies with vegan ice cream of your choice, cherries and chocolate shavings.
