with Walnut Breadcrumbs

INGREDIENTS
- 6 oz gluten-free penne pasta
- 1/4 cup gluten free panko breadcrumbs
- 1/2 cup walnuts
- 1/2 tbsp bay seasoning (divided)
- 1/2 tsp dried oregano
- 2 garlic cloves
- 6 oz chile con queso
- 2 oz vegan cream cheese
- 1/4 tsp cayenne pepper
- 4 tsp vegetable oil*
- Salt*
- Pepper*

INSTRUCTIONS
Bring medium saucepan of salted water to boil. Add penne and cook until al dente, 8 to 10 minutes. Reserve ¼ cup pasta water. Drain pasta and set aside. Set saucepan aside until step 3. (4-servings: reserve ½ cup water)
Heat 1 tbsp vegetable oil in small nonstick skillet over medium heat. Add panko, walnuts, and a pinch of pepper and cook, stirring frequently, until lightly golden brown, 5 to 7 minutes. Add just ½ tsp bay seasoning and just ½ tsp oregano and toss until well-combined; set aside. (4-servings: use 1 tsp bay seasoning, 1 tsp oregano)
Heat 1 tsp vegetable oil in same saucepan over medium heat. Cook garlic until soft, 2 to 3 minutes. Whisk in queso, cream cheese, just 1 tsp bay seasoning, just ¼ tsp cayenne, and reserved pasta water and heat until smooth, 3 to 5 minutes. Stir in cooked pasta. (4-servings: use 2 tsp bay seasoning, ½ tsp cayenne) (TIP: Add more cayenne if you prefer more spice.)
Divide the pasta between bowls and top with walnut breadcrumbs. Enjoy!
