Caramelize the onions

Heat 1 tbsp olive oil in medium nonstick skillet over medium-high heat. Add onion and cook, stirring occasionally, until softened and lightly browned, 8 to 10 minutes. Toast sourdough. (TIP: You can cook onion for longer for more caramelization and deeper flavor.)

Spread cream cheese on 2 toast slices. Top with caramelized onion and arugula. Spread fig preserves on remaining toast slices and close sandwiches.
