Caramelize the onions

Heat 1 tbsp olive oil in a medium nonstick skillet over medium-high heat. Add onion and cook, stirring occasionally, until softened and lightly browned, 8 to 10 minutes. Toast the sourdough bread. TIP: You can let the onion cook longer for more caramelization (a process that helps develop the onionā€™s color and flavor).

Build the sandwiches and serve

To assemble the sandwiches, spread cream cheese on one slice of toast. Top with some caramelized onion and baby arugula. Spread fig preserves on another slice of toast, and close the sandwich. Repeat to make the second sandwich.
