Cinnamon Apple Energy Bites

These apple pie energy bites will indulge your sweet tooth without any guilt. Thanks to our friends at the Food Runner food blog, you'll never think of apple pie the same way again! These little gems are filled with dates, dried apples, almonds and oats - see if you can only eat one at a time! We don't think you can - we sure couldn't!

INGREDIENTS

  1. 1 cup dried apples
  2. 1/2 cup pitted dates
  3. 1/2 cup unsalted dry roasted almonds
  4. 1/2 cup rolled oats
  5. 1 tablespoon maple syrup
  6. 1 teaspoon cinnamon
  7. 1/8 teaspooon allspice
  8. 2 tablespoons water*

INSTRUCTIONS

In a small bowl, soak dates for 10 minutes in hot water.

Add soaked dates, apples, almonds, oats, maple syrup, cinnamon, allspice and 2 tablespoons water into a blender. Blend on high speed until the mixture turns into a dough-like consistency.

Scrape down the sides of the blender as you go along, and add more water if needed, one tablespoon at a time.

Scoop out the mixture and roll into balls. Set on plate.

Place the apple bites in the freezer for 10 minutes.

Eat immediately, or keep in an air-tight container in the refrigerator for up to 3 days. Enjoy!
