Prepare the cheese

Roll herb garlic cheese into 4 balls and press into pistachios to evenly coat.

Crisp the rice

Heat 1 tbsp olive oil in large nonstick skillet over medium-high heat. Add garlic and cook until fragrant, 1 to 2 minutes. Add brown rice, sumac, and a pinch of salt and stir. Flatten rice on bottom of skillet and cook, undisturbed, until rice begins to crisp, 5 to 7 minutes.

Serve

Divide crispy sumac brown rice between 2 bowls. Top with pistachio cheese balls, cucumber, parsley, and raisins.
