Build the sandwiches

Thinly slice the pear. To assemble the sandwiches, spread cashew cheese on one slice of sourdough bread and add a few pear slices. Smear fig spread on another slice of bread, and place face-down to close the sandwich. Repeat to make the second sandwich.

Grill the sandwiches

Heat butter in a large nonstick skillet over medium-high heat. Once butter is melted, add the sandwiches and cook until browned and crispy, 2 to 3 minutes per side. Halve the figgy grilled cheese sandwiches and serve with any remaining pear slices.
