  1. 1 tablespoon coconut oil
  2. 1/4 cup almond butter
  3. 1 1/2 cups pitted dates
  4. 1 1/2 cups cashews
  5. 3 tablespoons cacao powder (used in two steps)

INSTRUCTIONS

Place dates in a medium bowl and soak in hot water for 10 minutes, then drain and squeeze out excess water.

In a blender or small food processor, combine coconut oil, almond butter, and dates. Note that mixture will not be smooth at this point. Add 1 tablespoon of cacao powder while saving the rest for the last step. Add cashews and blend until smooth.

Roll mixture into small balls; should create up to 15 bite-size snacks. Refrigerate for 30 minutes to set. Roll in remaining cacao powder, and enjoy!
