Prepare the broccoli

Bring small saucepan of salted water to a boil for broccoli. Make small tear at top of brown rice bag and microwave bag for 1 minute. Add broccoli to boiling water, cover, and cook until crisp-tender, 2 to 3 minutes. Drain broccoli. (TIP: If you don’t have a microwave, heat precooked brown rice and 1 tbsp water in small saucepan over medium-high heat. Cover and steam until warmed through, 3 to 4 minutes.)

Serve

Divide brown rice between 2 bowls. Add broccoli, avocado, and dill. Top with pistachios and drizzle with tzatziki.
