These veggie burgers are made from tons of good-for-you green vegetables including kale, zucchini, broccoli, and spinach. We pair them with tangy, cooling cucumber-yogurt sauce. Garlic fries are the perfect dipper for any extra tzatziki.

Make the garlic fries

Preheat oven to 450°F. Combine potato, 2 tsp vegetable oil, and a pinch of salt and pepper on baking sheet and toss. Roast for 15 minutes. Add garlic, toss to coat, and continue to roast until potatoes are browned and crispy, 5 to 10 minutes. (4-servings: use 4 tsp vegetable oil)

Cook the burgers

Heat 1 tsp vegetable oil in large nonstick skillet over medium-high heat. Add burgers and cook until browned and heated through, 4 to 6 minutes per side. Move burgers to plate and wipe skillet clean. (4-servings: use 2 tsp vegetable oil)

Toast the buns and serve

Heat same skillet over medium heat and add buns, cut side down. Toast until golden brown, 2 to 4 minutes. Transfer buns to plates and top with patties. Add tomato and sprinkle with salt and pepper. Spread tzatziki on top buns and close burgers. Divide garlic fries between plates and serve with extra tzatziki for dipping. Enjoy!
