Caramelize the onions
Heat 1 tbsp olive oil in large nonstick skillet over medium-high heat. Add onion and a pinch of salt and cook until softened and lightly browned, 8 to 10 minutes. Off heat, add balsamic glaze and stir. Transfer to small bowl and wipe skillet clean.

Build the sandwiches
Place 2 sourdough slices on clean work surface. Spread herb garlic cheese evenly on sourdough and top with balsamic onions and spinach. Spread strawberry preserves on remaining sourdough slices and gently close sandwiches.

Grill the sandwiches
Melt butter in skillet over medium-high heat. Add sandwiches and cook until browned and crispy, 2 to 3 minutes per side. Transfer to 2 plates.
