Grilled Cheese Sandwiches
with Strawberry Balsamic Onions

- 1 yellow onion, peeled and thinly sliced
- 2 tbsp balsamic glaze
- 2 oz Treeline® Dairy-Free Herb Garlic Cheese
- 4 slices sourdough bread
- 2 oz teen spinach
- 1 tbsp strawberry preserves
- 2 tbsp vegan oat butter
- 1 tbsp olive oil*

Heat 1 tbsp olive oil in a large nonstick skillet over medium-high heat. Add onion and a pinch of salt. Cook until softened and lightly browned, 8 to 10 minutes. Remove pan from heat. Add balsamic glaze and stir. Transfer to a small bowl and wipe the skillet clean.
Spread half the herb garlic cheese on one slice of bread. Top with half the balsamic onions and spinach. Spread strawberry preserves on another slice of bread and close the sandwich. Repeat for the second sandwich.
Melt butter in the skillet over medium-high heat. Add sandwiches and cook until browned and crispy, 2 to 3 minutes per side.
