Green flecks of jalapeño add a zesty bite to these corn cakes, which are as good cold as they are hot. Don’t worry if the cornmeal batter thickens too much in the pan—you can use a wet spoon to press it into shape on the baking sheet if need be. The name “wax bean” may sound odd, but it references the dull sheen on the pale yellow–colored beans. Their addition to this bright salad is as beautiful as it is tasty.
