Japanese Yam Fries

Fries are only as good as what you dip them in. Here, sweet Japanese yams are roasted to perfection in the oven while you whip up a wasabi aioli. Nori paper is used, along with salt, to add flavor and a touch of crunch.

Bake the fries

Preheat the oven to 425°F. Cut the yam into matchstick fries. Add them to a baking sheet along with 2 tbsp oil, sesame seeds, and a good pinch of salt and pepper. Toss to coat. Bake for 15 - 17 minutes until golden brown. Flip over and bake for 5-10 more minutes.

Make the aioli

While the fries cook, prepare the aioli. Halve the lemon. In a small bowl whisk the Vegenaise, wasabi, agave and ½ cup lemon juice. Add salt to taste. Cut the nori into small pieces.

Serve

Once the fries are done, sprinkle them with the nori pieces. Serve alongside the wasabi aioli.
