Kimchi Grilled Cheese Sandwiches
with Jalapeño & Sesame Butter

- 2 tbsp vegan butter
- 4 slices sourdough bread
- 1 tbsp sesame seeds
- 2 oz vegan cheddar cheese
- 1 jalapeño, deseeded and thinly sliced
- 3.5 oz vegan cabbage kimchi, roughly chopped

Spread butter on each slice of sourdough bread, and sprinkle with sesame seeds. Heat a large nonstick skillet over medium-high heat. Add 2 slices of bread, butter side down. Sprinkle just ¼ of the cheddar cheese on each slice, and add jalapeño and kimchi. Top with remaining cheddar cheese and close sandwiches with the remaining bread slices, butter side up. Continue to cook until sandwiches are browned on both sides, 3 to 4 minutes per side. Cut sandwiches in half and serve.
