Roast the sweet potato
Preheat the oven to 425°F. Add yam to a baking sheet, coat with 1 tsp vegetable oil, and sprinkle with salt. Roast, cut side down, until tender and browned, 20 to 25 minutes. Remove from the oven and set aside.

Make the miso glaze
Add miso paste, agave, and 2 tsp vegetable oil to a small bowl and whisk the miso glaze.

Glaze and broil the sweet potatoes
Set the oven to broil on high. Spread miso glaze on the cut side of the roasted yam halves. Return to the oven and cook until the miso glaze begins to brown, 1 to 2 minutes. TIP: All broilers are different. Watch carefully to ensure the food doesn’t burn.

Serve
Transfer the Kyoto style sweet yams to a plate and sprinkle with scallion and radish.
