Lebanese Farro
with Lentils & Crispy Dates

INGREDIENTS
- 2 tbsp crispy onions
- 1 oz California dates, chopped
- 0.5 oz cilantro, leaves and tender stems chopped (divided)
- 1 tsp ground cumin
- 1 tsp ground coriander (divided)
- 1 tsp ground cinnamon (divided)
- 1/4 cup caramelized onion jam
- 6 oz farro
- 6 oz beluga lentils
- 1/4 cup cilantro crema
- 2 tbsp + 1 tsp olive oil*
- Salt*
- Pepper*

INSTRUCTIONS
Combine crispy onions, dates, just half the cilantro, 1 tsp olive oil, and a pinch of salt and pepper in small bowl. Set aside. (4-servings: use 2 tsp olive oil)
Heat 2 tbsp olive oil in medium saucepan over medium heat. Add cumin, just half the coriander, and just half the cinnamon and cook until fragrant, about 1 minute. (4-servings: use ¼ cup olive oil)(TIP: Keep remaining coriander and cinnamon for your own use.)
Add onion jam, farro, and lentils to saucepan with bloomed spices and cook, stirring frequently, until warmed through, 3 to 4 minutes. Off heat, stir in remaining cilantro. Divide Lebanese farro with lentils between serving bowls. Sprinkle with crispy date topping and serve with cilantro crema. صحه وعافيه!
