INSTRUCTIONS

Cook the rice

Add sushi rice, 1 cup water, and a pinch of salt to a small saucepan. Bring to a boil, cover, reduce heat to low, and cook until the grains are tender and water is absorbed, 12 to 15 minutes.

Prepare the bowls

Halve the avocado, remove the pit, and thinly slice the flesh. Dice the mango, removing the seed. Roughly chop the macadamia nuts. Halve and juice the lime. Add lime juice and tamari to a small bowl and whisk to combine.

Serve

Divide the rice between 2 bowls. Top with sliced avocado, diced mango, and chopped macadamia nuts. Drizzle tamari lime dressing over the mango poke bowls and sprinkle with kibbled nori.
