Maple Glazed Delicata Squash
with Butter & Sage

- 2 tbsp vegan butter
- 2 tbsp maple syrup
- 2 delicata squash, halved lengthwise, deseeded, and cut into half moons
- ½ oz fresh sage, leaves picked

Preheat the oven to 425°F. Melt butter in a small skillet over low heat. Transfer to a bowl, add maple syrup and a pinch of salt, and whisk to combine.
Add squash, maple syrup mixture, and a sprinkle of salt and pepper to a foil-lined baking sheet and toss. Roast squash until golden brown and tender, 15 to 18 minutes. Remove baking sheet from oven, add sage leaves to the squash, and toss. Return to oven until sage becomes fragrant, 5 to 7 minutes.
Transfer the maple glazed squash with sage to a platter. Enjoy!
