  2. 2 cups all-purpose flour
  3. 2 tsp baking powder
  4. 3 tbsp matcha powder
  5. 2 ¼ cups non-dairy milk*

  8. 2 tbsp vegan butter
  9. 2 tsp agave
  10. ¼ cup goji berries

INSTRUCTIONS

Make the batter

Whisk the flaxseed meal and 2 tbsp water in a large bowl. Add flour, baking powder, matcha powder, and ¼ tsp salt to the bowl, and combine. Add non-dairy milk and turbinado sugar and mix.

Cook the pancakes

Heat 1 tbsp vegetable oil in a large nonstick skillet over medium heat. Add ⅓ cup batter and cook until batter starts to bubble, 2 to 3 minutes. Flip pancake and cook an additional 2 minutes, or until cooked through. Repeat with remaining batter. (You should get about 8 medium pancakes.)

Make the sweet butter

Peel and dice the kiwis. Mix butter and agave in a small bowl. Serve matcha pancakes with sweet butter and sprinkle with diced kiwi and goji berries.
