Make the avocado mash

Scoop out avocado flesh and transfer to small bowl. Using back of fork, mash avocado until mostly smooth. Season to taste with salt and pepper.

Assemble the toasts and serve

Toast sourdough and top with mashed avocado. Divide toasts between 4 plates and top each with pea shoots. Drizzle with mojo rojo and olive oil and sprinkle with pepitas.
