  1. 1 cup vegan chocolate chips
  2. ¼ cup peanut butter (we also love cashew, almond, or sunflower)
  3. 2 tbsp confectioners sugar
  4. 1 tsp vanilla extract

INSTRUCTIONS

Melt the chocolate chips in a glass bowl in the microwave, stirring at 30 second intervals, until completely melted. In a separate bowl, combine the peanut butter, sugar, and vanilla and mix well.

Spread 1 to 2 tbsp of melted chocolate in each of the liners. Use your hands to mold about 2 tsp of the peanut butter filling into a disk and place it into the chocolate. Top with more chocolate and smooth out the tops.

Refrigerate until the chocolate is set, about 20 to 30 minutes. Enjoy!
