Peanut Butter Freezer Fudge

This simple freezer fudge was inspired by blogger and food investigator, Food Babe. This fudge comes together in a pinch and tastes sinfully delicious. Lucky for us there's only five delightful ingredients, all plant-based! If you're a peanut butter fanatic, you're going to LOVE this snack!

INGREDIENTS

  1. 1 cup peanut butter
  2. 1/4 cup coconut oil
  3. 1 tablespoon maple syrup
  4. 2 oz. chocolate chips
  5. 1/2 teaspoon salt*
  6. *not included
Tools: Medium bowl, Parchment paper, 8" x 6" Baking dish , Immersion blender (optional)

INSTRUCTIONS

Line a small baking dish (8" x 6" or smaller) with parchment paper. Cream the peanut butter, coconut oil, maple syrup and 1/2 teaspoon salt together in a medium bowl using a spoon or immersion blender.

Pour the mixture into the parchment paper-lined baking dish. Sprinkle the chocolate chips over the fudge and place in freezer for 1 hour.

Cut into 1 inch squares and enjoy! Fudge can remain in the freezer for 1 week (but it probably won't last that long)!
