There’s nothing better than a melty, cheesy, grilled cheese sandwich– especially when it’s plant-based and packed with fresh summer produce. Dark leafy greens like spinach and arugula are iron and protein packed. This easy summer meal uses a classic trick for a nice browned crust on the sourdough bread: Vegenaise, a creamy vegan mayonnaise, is used instead of butter. Sweet and crunchy, the arugula nectarine salad rounds the whole meal out.
