  2. 1 lemon, half juiced and half cut into wedges
  3. 4 slices sourdough bread
  4. 2 radishes, trimmed and thinly sliced into rounds
  5. 0.5 oz pea shoots
  6. 1 tbsp everything bagel spice
  7. 2 tbsp sunflower seeds
  8. 1 tbsp olive oil
  9. Salt

Make the avocado mash

Scoop avocado flesh from skin and add to medium bowl. Mash avocado with back of fork until mostly smooth. Stir in just half the lemon juice and a pinch of salt and pepper.

Assemble toasts and serve

Toast sourdough and divide between 4 plates. Top with mashed avocado, radish, and pea shoots. Sprinkle with everything bagel spice and sunflower seeds and drizzle with olive oil. Serve with lemon wedges.
