Make a 2 inch tear in the top of the quinoa bag and microwave for 1 minute. Peel and thinly slice the shallot. Divide the quinoa, shallot, baby spinach, and shredded beets between 2 serving dishes. Top with sauerkraut and hemp seeds. Drizzle with creamy garlic dressing.
