INSTRUCTIONS

Make the creamy coleslaw

Whisk together mayo, vinegar, sugar, and a pinch of salt and pepper in large bowl. Add coleslaw blend and toss to combine.

Crisp the jackfruit

Heat 1 tbsp vegetable oil in large nonstick skillet over medium-high heat. Add jackfruit and a pinch of salt and pepper and cook until jackfruit is crispy and brown in places, 5 to 6 minutes. Add BBQ sauce, toss to coat, and cook until sauce thickens, 2 to 3 minutes. (4-serving meal: use 2 tbsp vegetable oil) (TIP: If necessary, add more oil to crisp the jackfruit.

Serve

Set oven to broil on low. Place buns directly on top oven rack, cut side up, and toast until golden brown, 1 to 2 minutes. Transfer to plates and top bun bottoms with BBQ jackfruit, creamy coleslaw, and pickles. Close sandwiches and serve with remaining toppings. Tuck in! (TIP: All broilers are different. Watch carefully to ensure pretzel buns don’t burn.)
